Vegetable Frittata

A great healthy cheap meal that is easy to make. The ingredients can be easily substituted with vegetables that are already in your fridge. Can be paired with a salad for dinner or be had for lunch.

Serves 2-3 without a side. Can serve 4 with a side dish.
Bunch of spinach
1 Leek
Bunch of Asparuagus
Block of feta (I used low fat feta and it tasted ok in this dish)
6 eggs
¼ cup of milk (low fat or full fat)
Olive oil
Salt and pepper

What to do:
Turn on grill to 180°C.

Wash the spinach and chop. Slice off ends of asparagus and cut into three. Slice leeks so they are round disks about half a centimeter wide.

Whisk eggs and milk together. Crumble the feta into the mixture. Add salt and pepper. Set aside.

Use a frying pan that can go into the oven. On high to medium heat, sauté leeks. Add some salt while they are cooking as this will make them sweeter. Once the leeks are soft, add asparagus and stir for 3-4 minutes. Add spinach, stir and lower the heat to low. You want the spinach to wilt slightly but not turn to mush.

Add egg mixture and leave on low heat for 5 minutes.

Put under the grill until the egg mixture in the middle is no longer runny and is firm to touch (about 10 minutes).


*Vegetables can be added or substituted. Eg. Mushrooms, tomatoes, kale, green beans, broccoli etc.
